The Chamarel Distillery in Mauritius is a relatively recent yet significant addition to the island's rum production heritage. It is known for producing high-quality, artisanal rum and is situated in the picturesque Chamarel region, which is famous for its scenic beauty, including the Chamarel Seven Coloured Earths and waterfalls.

Established in 2008 by the Couacaud family, who own the surrounding Domaine de Chamarel. The family aimed to produce premium rum that reflects the unique terroir of the Chamarel region. Unlike many distilleries in Mauritius, which primarily use molasses (a byproduct of sugar production), Chamarel Distillery was founded with the intention of producing rum directly from fresh sugarcane juice, also known as "rhum agricole." This approach is more typical of French Caribbean rums and allows for a greater expression of the sugarcane's natural flavours.

The distillery is located on the southwest coast of Mauritius, in the fertile valley of Chamarel. The region’s microclimate and rich volcanic soil provide ideal conditions for growing sugarcane, which is harvested by hand to ensure the highest quality.

The Chamarel Distillery places a strong emphasis on sustainability and eco-friendly practices. The sugarcane used in production is grown on the estate, allowing for close monitoring of agricultural practices. The distillery recycles its waste products; bagasse (the fibrous residue after sugarcane is crushed) is used as fuel, and the vinasse (a byproduct of distillation) is utilized as fertilizer.

The production process at Chamarel is highly artisanal. The freshly cut sugarcane is transported quickly to the distillery to preserve its freshness. The cane is crushed within four hours of harvesting, and the juice is fermented and distilled in small batches. Chamarel uses both column stills and copper pot stills, allowing them to produce a range of rum styles, including both light and more complex, full-bodied rums. Aged rums are matured in French oak barrels, which impart rich flavours and complexity.

Since its inception, Chamarel rum has garnered international acclaim, winning several awards at prestigious spirits competitions. This recognition has helped place Mauritius on the global rum map and has established Chamarel as a key player in the world of premium rum.
